Launches FunctionalEgg.org

In an effort to provide free education about the many functional uses of eggs, the American Egg Board has launched FunctionalEgg.org, a new website designed to demonstrate, through video, how incredible eggs truly are.

Throughout the many videos available on the site, Shelly McKee, Ph.D, Associate Professor, Department of Poultry Service at Auburn University, Auburn, AL, guides visitors through the properties of eggs which contribute to: crystallization in ice cream, aeration in baked goods and exactly why egg whites can foam. “I was quite excited to work with the American Egg Board on this project,” says McKee. “A visual presentation of this caliber is like watching a technical paper come to life, with all the practical application information a formulator could wish in a condensed form.”

Not just meant for the curious, FunctionalEgg.org also provides Continuing Education accreditation to individuals who successfully complete the testing accompanying each video. Additionally, the FAQ portion of the site features a fantastic egg conversion chart along with answers to many common questions about the functionality of eggs. Check the site often as new videos and courses are being added regularly.

Egg Market Strong Despite Recession

A Recent Report Tells All

Mintel, a leading global supplier of consumer, product and media intelligence, recently conducted a survey of Americans regarding egg consumption and purchasing habits. With 94% of all U.S. households purchasing and consuming eggs on a regular basis, this report comes at a great time for the egg industry.

92% of Mintel respondents agree that eggs are not only healthy, but an important part of their diet. Unfortunately, 30% of respondents eat fewer eggs than they would prefer due to misunderstandings about cholesterol. “Older egg buyers confront heart-health issues and therefore limit egg consumption because of the cholesterol. The over-55 egg buyer is a prime target for low-cholesterol eggs and egg substitutes, and could be reminded that cholesterol levels in eggs have fallen,”says Bill Patterson, senior analyst at Mintel.

As eggs are such a part of peoples lives and diets, half of the households polled stated that their purchasing habits would not change regardless of price increases. Due to the recession, many households are opting for larger volumes of eggs as a substitute for, more expensive, meats. While 88% of consumers still purchase regular white eggs, organic and cage free eggs are most widely adopted by those aged 25 to 34. Higher awareness of health and diet along with animal welfare concerns and their generational tendency to embrace natural and sustainable foods contribute to their buying habits.

Dixie Egg Company Donates

32,400 Eggs to Second Harvest

On April 12th, 2011 at 10a.m., Dixie Egg Company donated 32,400 eggs to Second Harvest North Florida. Since the beginning of the recession in December 2007, many of Jacksonville’s families have found themselves with food insecurity, struggling to satisfy life’s most basic necessity. Groups like Second Harvest work with corporate donors nationwide to provide nutritious food to the neediest of families.

“Dixie Egg Company is a third generation family business,” said Jacques Klempf, president of Dixie Egg Company “and we are proud to be partnering with Second Harvest North Florida to provide much needed protein to the most needy in our community, especially during the Easter holiday season.”

“Corporate donations are critical to the work we do each day at Second Harvest, and we are grateful that Dixie Egg Company has so generously provided this supply of eggs for families experiencing need in our community. Eggs are a protein-rich food source that is vital for proper nutrition, and we know how important this is for children and their ability to learn. Educating about eggs’ role
in a healthy diet.

On the September 14, 2009 episode of the Rachel Ray Show, Jacques Klempf of Dixie Egg Company made an appearance representing the American Egg Board. He was joined by a special guest, Sesame Street’s Cookie Monster, to educate the audience on the important role eggs play in a healthy diet. Eggs are an excellent source of protein and it’s been shown that eating 2 with your morning breakfast prepares your body to burn more fat throughout the day.

During the show, Jacques also promoted The Good Egg Project: “America’s egg farmers are encouraging everybody to eat good and do good every day. So if you’ll sign up and pledge, America’s egg farmers are going to donate eggs for the hungry.
